Chocolate Toffee Pieces

*Excuse the Christmas photo for a recipe posted in January. Todd Starnes used this recipe on his Fox News website (www.toddstarnes.com) during Christmas so that’s why it has a Christmas candle in the photo. This non-techy gal has just learned how to upload blog posts. (Yes, miracles do happen.)

My cousin, Dee Anne Sauter, shared this recipe with me many years ago. It’s become one of my favorite recipes and I make these every Christmas and throughout the year whenever I need to serve a sweet treat. I don’t think I’ve ever served them without getting requests for the recipe.

Saltine crackers (about 24)

¾ cup brown sugar

1 cup butter or margarine (I use butter)

12 oz. milk chocolate chips (I use Ghirardelli)

¾ cup pecans, coarsely chopped

Preheat oven to 400°. Line a 10×15 pan with foil; spray well with cooking spray. Place a layer of crackers in the pan; set aside. Boil the brown sugar and butter in a saucepan for three minutes. (Stir constantly once it begins to boil.) Pour over the crackers; spread evenly. Bake for five minutes and then remove from the oven. Sprinkle with chocolate chips. Let sit for one minute and then spread melted chips with a spatula. Sprinkle with nuts; press down lightly. Cut on diagonal immediately or cool and break into pieces.
